Meet Executive Chef, Brent Black

Executive Chef, Brent BlackA graduate of the New England Culinary Institute in Montpelier VT, Chef Brent Black pleases thousands of palates a week. From the Food Court to Fortunes and the Garden Buffet to The Lodge, his menus appeal to even the finickiest of eaters yet satisfy the most cultured of guests.

Chef Black has been perfecting his upscale and contemporary culinary flare for over 22 years in various locations throughout the country. He has exceptional experience in fine dining restaurants starting his career in San Diego, CA, then enhancing his skills at restaurants and catering companies from Boston, MA to St. Croix, USVI. He also served as Head Chef at Luna Restaurant in Stratton, VT at the Stratton Mountain Club - a contemporary fine dining restaurant.

Joining the Saratoga Gaming and Raceway team in July of 2008, Chef Black’s range of experience has proven to be a tremendous asset throughout the property.

“My favorite part of working at Saratoga Gaming and Raceway is probably the most challenging as well,” says Chef Black. “The variety in food venues challenges me everyday to create delicious food ranging from hamburgers to filet mignon.”

In addition to his love for cooking, the great outdoors is also a passion of Chef Black’s. You can often find him fly-fishing, canoeing or hiking with “Saffron”, his yellow lab. He prides himself in his Vermont based, year-round ecotourism company, Black’s Back Country Adventures, that offers “back-woods” adventure excursions.

4 Tablespoons of Olive Oil
Salt and Pepper

2 Cinnamon Sticks
6 Whole Cloves
3 Golden Delicious Apples
1Teaspoon Fresh Lemon Juice
